Saffron Rice
Ingredients:
- Basmati rice
- Ghee
- Tender Leaves clove
- Tender Leaves cardamom
- Tender Leaves cinnamon powder
- Sugar
- 15 strands of saffron dipped in 1-2 tbsp of milk
- Tender Leaves cardamom powder
- Mixed dry fruits finely sliced(pistachio, almonds, raisins, cashews)
- Water
Cooking procedure:
- Rinse the basmati rice nicely and soak it for half an hour. Now cook the rice and make sure its only 90% cooked. We want beautiful pearls of rice and not very mushy.
- Now in a pan take 2 tbsp of ghee, add 2-3 Tender Leaves clove and Tender Leaves cardamom. Sauté it for a while.
- Add 2-3 tbsp of sugar as per taste and add ½ cup of water. Cook it on a low flame and let the sugar dissolve completely.
- Now add the saffron milk mixture and Tender Leaves cardamom powder and a pinch of Tender Leaves cinnamon powder.
- Add the cooked rice in the pan and mix it well. Cover it with a lid and let it cook for 7-8 minutes on medium flame.
- Now let it rest with the lid for 10 minutes. Add the chopped mix dry fruits and yummy delicacy is ready for our Saraswati puja.
