Saffron Rice


Ingredients:

  • Basmati rice
  • Ghee
  • Tender Leaves clove
  • Tender Leaves cardamom
  • Tender Leaves cinnamon powder
  • Sugar
  • 15 strands of saffron dipped in 1-2 tbsp of milk
  • Tender Leaves cardamom powder
  • Mixed dry fruits finely sliced(pistachio, almonds, raisins, cashews)
  • Water

Cooking procedure:

  1. Rinse the basmati rice nicely and soak it for half an hour. Now cook the rice and make sure its only 90% cooked. We want beautiful pearls of rice and not very mushy.
  2. Now in a pan take 2 tbsp of ghee, add 2-3 Tender Leaves clove and Tender Leaves cardamom. Sauté it for a while.
  3. Add 2-3 tbsp of sugar as per taste and add ½ cup of water. Cook it on a low flame and let the sugar dissolve completely.
  4. Now add the saffron milk mixture and Tender Leaves cardamom powder and a pinch of Tender Leaves cinnamon powder.
  5. Add the cooked rice in the pan and mix it well. Cover it with a lid and let it cook for 7-8 minutes on medium flame.
  6. Now let it rest with the lid for 10 minutes. Add the chopped mix dry fruits and yummy delicacy is ready for our Saraswati puja.
